A roll out mat covers a large training area without joints, which is what floor gymnastics and combat sports need: nothing for a foot or a hand to catch on mid movement. It also rolls away, so a multi-purpose hall can return to another use within minutes of a session ending.

High density foam with a non-slip covering is the construction that makes a roll out mat work over time. Density matters more than thickness on its own: a thick, low density foam feels soft on delivery, compresses under repeated falls and stops providing the cushioning it was bought for within a season.
The trade-off against interlocking tiles is handling. A roll is heavier and normally a two person job to deploy and store, but it produces a continuous surface and is redeployed quickly once a club has a routine for it. Tiles are lighter to handle and repairable unit by unit, at the cost of visible joints across the mat.
